Choose your yogurt bowl option.

In a bowl, combine ingredients and swirl together.

Serve &amp; enjoy!

This no-cook, high-protein, Tropical Chia Pudding Breakfast Bowl is creamy and delicious, made with chia seeds, Greek yogurt, mango and kiwi.

Tropical Chia Pudding Breakfast Bowl

chia seeds

almond milk (vanilla)

Greek yogurt

monk fruit

kiwi

mango (from 1 small)

coconut (shredded)

In a large mason jar or container, add the chia seeds, almond milk, yogurt and sweetener of your choice.

Whisk until thoroughly combined, scraping sides of the jar with a spoon or spatula, if needed, to incorporate all the chia seeds.

Refrigerate for at least 2 hours or up to overnight.

Meanwhile, in a small skillet over medium low heat, toast the coconut until golden brown, about 4 minutes. Let cool and store in a zip top bag or small Tupperware container until ready to use.

When ready to eat, transfer pudding into 2 small serving bowls, about 1 cup each.

Top each with kiwi, mango and shredded coconut, dividing the fruit evenly among the 2 bowls.

Optional: Drizzle with a little extra syrup (or honey), if desired and serve.

sweet apple (peeled, cored, seeded and diced (Honey Crisp, Gala))

sugar

golden raisins

nutmeg

0% fat Stonyfield plain yogurt

walnuts

Place diced apple, sugar and raisins in a small pot, add 1/4 cup water, sprinkle with cinnamon, pinch of nutmeg, cover, and cook over low heat until soft, 16 to 18 minutes.

Set aside to cool.

Divide the yogurt in 2 medium bowls. Top with apples and chopped nuts. Serve immediately.

The apple mixture will freeze just fine.  I would suggest freezing it in small [ice cube size?] portions so you can take out just what you want for one serving.  In fact, you've just given me the idea of how to have this treat and save apple cooking time, too.  Thanks!

If I could give this recipe 7 stars I would, cuz omg! I just served it over greek yogurt, it was incredible!

So delicious! I didn't have raw sugar so I used a little Splenda to sweeten it. The first two times I ate the apples over yogurt and it was good, but today I had a little part skim ricotta cheese leftover so I put it on that and it was even better! Like an apple pie cheesecake lol definitely keeping this recipe in my rotation!
