Healthy Chocolate Pudding Snack

full-fat plain Greek yogurt**

maple syrup

Mix everything together in a bowl. It will be very thick at first, but it will smooth out once the cocoa powder incorporates. If your yogurt is very thick, you can add 1/2 to 1 tablespoon water to get a bit lighter texture, but all yogurts vary. (Also, you can always add a little more cocoa powder or maple to adjust to your own taste.)

This chocolate Greek yogurt pudding is the kind of recipe that makes you slow down for a second. It came from wanting a rich chocolate pot de crème that didn&#039;t require a water bath or an afternoon of fussing over the stove. Pair that deep chocolate base with a quick peanut butter cream, and you’ve got a foolproof, everyday staple that simply tastes like home.

Chocolate Greek Yogurt Pudding

Greek yogurt

g cream cheese

70 g powdered sweetener (see notes)

g chocolate casein protein

60 g dark chocolate whey protein isolate

eggs

butter

½ tsp salt flakes

gelatin

240 g thickened cream (or heavy cream)

peanut butter

g vanilla whey protein isolate

Add all pudding ingredients to a food processor and mix until smooth. Pour into a saucepan.

Whisk mixture over medium heat until the custard thickens and is smooth and creamy. Taste and adjust sweetener as needed.

Pour into 8 single-serve cups and chill overnight.

Place all the peanut butter cream ingredients into a mixing bowl. Use a handheld mixer to whip until thick. Mine took 20 seconds.

Transfer to a piping bag and pipe over pudding. If the peanut butter cream is a bit too soft for piping, pop it into the piping bag and chill until it firms up a little before piping. Keep the puddings chilled.

CONVENTIONAL METHOD

Add all pudding ingredients to mixer; mix 10 sec/speed 9.

Insert whisk attachment; cook 7 min/80°C/speed 2. Remove whisk attachment; mix 10 sec/speed 9. Taste and adjust sweetener as needed.

Insert whisk attachment. Add all the peanut butter cream ingredients; mix 20 sec/speed 4 or until thick.

This is such a yummy recipe.  I halved it and it worked well. Definitely be making this one again.
