A yuca recipe made Cuban-style with a simple homemade garlic mojo and sautéed onions. The most flavorful side dish you&#039;ll ever make!

Cuban Yuca with Mojo

lbs yuca (peeled

white onion (thinly sliced)

garlic (minced)

extra virgin olive oil

sour orange juice

Salt + pepper

Add yuca to a large pot of water with salt. Bring the yuca to a boil on high heat then reduce to low. Cover and simmer for about 30 minutes until the yuca is fork-tender. Careful not to overcook it or you run the risk of the yuca getting too mushy.

Meanwhile, in a large saucepan, heat the olive oil at medium heat. Add the sliced onions and sauté for 5 minutes until they are softened and translucent. Add in the minced garlic, a pinch of black pepper, and salt to taste (start with 1/4 teaspoon then adjust to taste). Sauté the garlic for 30 seconds until fragrant then whisk in the sour orange juice until all is combined. Set aside.

Once the yuca is fork-tender, drain and pat them dry with paper towels then transfer them to a large bowl with a lid. Remove the stringy, fibrous core from the center of each piece of yuca with a knife, if desired.

Pour the hot garlic mojo sauce over the yuca making sure it is all well coated. Cover the bowl and allow it to cool for 10-15 minutes so the yuca absorbs the mojo. Serve immediately and enjoy!

Pressure Cooker Cuban Yuca Con Mojo

(2 lbs) Yuca (peeled)

ml (2 TBL) Extra Virgin Olive Oil

(1 TBL) Butter

(6 cloves) Fresh Garlic (minced)

(1/4 cup) Yellow/Brown Onion (diced)

(1 tsp) Sea Salt

118 ml (1/2 cup) Fresh Orange Juice ((or True Orange))

118 ml (1/2 cup) Fresh Lime Juice ((or True Lime))

Cut off ends of Yuca and then cut into 2 or three pieces.&nbsp; Place on end and with a sharp knife, cut off the skin.&nbsp; Cut Yuca in quarters lengthwise and cut out the woody core.&nbsp; Place Yuca in Steamer Basket.

Select Sauté or Browning on pressure cooker and fully heat the cooking pot.

Add Oil and Onions and Sauté for 3 minutes.&nbsp; &nbsp;Add Garlic and Butter and Sauté for 30 seconds more.

Stir in salt, orange juice and lime juice.

Place the steamer basket with the Yuca into cooking pot.

Lock on the lid and close pressure valve. Cook for 12 minutes on High Pressure. When the beep sounds, wait 10 minutes and then release the remaining pressure.

Remove the lid and transfer Yuca from the steamer basket, into the sauce in the cooking pot.&nbsp; Select Sauté or browning and simmer to thicken sauce.

Place Yuca and Sauce in bowl and Garnish with Parsley.

Steamed Yuca with Garlic (Yuca con Mojo)

Boil the yuca

Bring a pot of water with salt to boil before adding in the yuca. Boil until fork tender, about 14-20 minutes depending if starting from fresh or frozen. Strain from the water and set aside.

Remove the core

Once the yuca has cooled enough to touch, remove the fibrous core (see pictures above).

Make the mojo sauce

In a saucepan combine oil, onion, garlic, adobo, lime juice, and cilantro. Cook over medium low heat until the onions begin to turn pink in color, about 10 minutes.

Combine the yuca and mojo

Toss the mojo sauce with the steamed yuca, until evenly combined. Add salt to taste, serve and enjoy!

I feel so incredibly lucky to have found these recipes. It’s reinspired me to cook the meals I grew up with…but with instructions I can reliably follow vs calling mami and it’s a dash of this, etc haha! Anyways grateful for Salina and very excited to try this newly listed recipe
