Loaded in flavor as some turmeric for it's anti-inflammatory properties, this Indian spiced zucchini and tomatoes dish will not disappoint your taste buds.

Indian Spiced Zucchini and Tomatoes

onion

tbs ginger (minced

tsp red chili flakes

garlic (grated)

tbs cumin

tbs turmeric

coriander

tsp sea salt

zucchini (or 2 medium zucchini - cut large dice)

tomatoes (diced)

c fresh cilantro (for garnish)

c plain yogurt (for garnish optional)

Spray medium sauce pan with non-stick cooking spray and sautee onions, ginger and chili flakes for 3-4 minutes or until onions become tender.

Add garlic, cumin, tumeric, coriander and salt - cook additional 60 seconds.

Stir in zucchini and sautee 2 minutes.

Add tomatoes, stir and bring to simmer.

Cover and let cook for 15-20 minutes or until squash is tender.

Garnish with fresh cilantro and plain yogurt if you wish.

This was really good! I made it as a side dish to Chicken tikka masala and it was perfect and blended well with the main dish and served with naan. Very easy to fix too.

Swapped out squash for eggplant (close enough, right?) and served it over rice as an entree. Yum! Has a great kick to it; my spice-beast of a boyfriend put a little tabasco on it, while I thought it was just right on its own. Will definitely keep this around for easy, customizable meals.
