Zucchini and Feta Fritters, a fabulous summer side dish to make great use of in-season zucchini and mint.

Zucchini and Feta Fritters

zucchini (about 1½ pounds)

eggs (whisked)

feta cheese

onion

mint leaves (chopped)

cumin

salt

black pepper

whole wheat flour (use cup4cup for gluten-free)

extra virgin olive oil

Shred the zucchini using the largest holes on a cheese grater (or a food processor with a shredding disk).

Use a clean kitchen towel to squeeze out as much liquid from the zucchini as you can (discard the liquid).

Transfer to a large bowl and stir in the eggs, feta, mint, onion, cumin, salt, and pepper to taste.

Stir in the flour.

In a large nonstick skillet, heat 1 teaspoon olive oil over medium-low heat.

Scoop out the zucchini mixture using a ¼-cup measure and drop it into the pan, repeating to make as many patties as will fit in the skillet, about 4 at a time.

Gently flatten the patties with the back of the measuring cup and cook until golden brown on both sides and cooked all the way through, 3 to 5 minutes per side.

Repeat to make the rest of the fritters.

Zucchini Feta Fritters

lb shredded zucchini

feta cheese crumbles

dill+parsley

jalapeno pepper, diced

flour (or more)

salt, pepper

Place the zucchini in the colander and squeeze the excess water out.

Place all the ingredients into a medium mixing bowl and stir nicely. (If the mixture looks too runny, add a bit more flour).

Fry the fritters in a large non-stick skillet on medium heat for about 2-3 minutes on each side.

Transfer the zucchini fritters onto a paper towel-lined plate and let them cool down for 5 minutes before serving.

Serve with Tzatziki sauce or yogurt.

Zucchini fritters loaded with crumbled feta and fresh herbs

zucchini ((about 3 cups shredded))

feta cheese ((about 100 g))

Tablespoons minced cilantro

all purpose flour

sea salt & fresh ground black pepper

Shred the zucchini using a grater or food processor

Place the shredded zucchini in a colander and squeeze out any excess water.

Add the squeezed zucchini, feta cheese, cilantro, and diced onion to a medium sized bowl and season well with sea salt and fresh group pepper.

Add the beaten egg and mix well

Stir in the flour

Heat a large skillet to medium heat, and cover the bottom of it with oil.

When the oil is heated, begin adding the fritters to the skillet by the heaping spoonful.  Press the fritter down with the back of the spoon to form a 1/3&quot; thick fritter.

Cook on the first side for 2-3 miunutes, or unil the bottom of the fritter is golden brown before flipping them and cooking the next side for the same.
