Zucchini Bread Baked Oatmeal

banana (120 grams)

peanut butter

non-dairy milk

maple syrup (40 grams)

vanilla

gluten free rolled oats (157 grams)

zucchini (170 grams)

cinnamon

tsp nutmeg

tsp baking powder

tsp salt

chocolate chips walnuts

Pre-heat oven to 350 F. Grease or line a 8x8 inch baking pan. 

Into a large bowl mash the banana. Add in all the wet ingredients and stir to combine.

Add all the dry ingredients and zucchini into the bowl and mix to combine. Transfer the batter into the prepared baking pan and top with chocolate chips or walnuts. Bake in the oven for 35-40 minutes, or until the surface is lightly browned. 

Remove from oven and let it cool for 3-5 minutes before serving.

I snuck 1 cup of zucchini into my morning oats (think zucchini bread) along with a ripe banana to sweeten them naturally and loved how these Zoats or Zucchini Oats turned out for a high-fiber, healthy breakfast.

Combine the first 6 ingredients in a small pot, zucchini to cinnamon and turn the heat on medium-low.

Cook, stirring until the oats are creamy and cooked through, about 3 to 5 minutes, depending on the oats.

Pour into a bowl and top with blueberries, slivered almonds and remaining cinnamon.

This zucchini oatmeal tastes just like chocolate zucchini bread batter! This hearty breakfast is chocolatey, rich, luscious, and totally healthy! The grated zucchini is barely noticeable in this oatmeal, making it the perfect way to add volume to your breakfast without additional calories.

Combine all ingredients in a medium pot and bring to a boil. 

Once boiling, lower to medium heat and simmer for 5 minutes, stirring frequently, until the oatmeal is thick. Remember that the oatmeal will continue to thicken as it cools. If the oatmeal is too thick, add more milk or water. If the oatmeal is too thin, continue to simmer until it reaches the desired consistency. 

Remove from heat and serve. Top with chocolate chips, chopped banana, vegan yogurt, chopped dates, or any other nut, seed, or fruit that you like! This oatmeal will keep in the fridge for 4-5 days.
