Chocolate Zucchini Pancakes are so tasty. Chunks of dark chocolate and shredded courgette turn this into a special breakfast, topped with maple yogurt.

Chocolate Zucchini Pancakes

ml (1/2 cup) milk

maple syrup

vanilla extract

oil (plus extra for cooking)

g (1 cup) raw zucchini/courgette, grated

g (1/3 cup) dark chocolate, chopped

150 g (1 cup) plain (all purpose) flour

baking powder

cinnamon

salt

plain Greek yogurt

Whisk the milk, maple syrup, vanilla, egg and oil together in a large mixing bowl.

Whisk in the grated courgette (zucchini), chocolate, flour, baking powder, cinnamon and salt.

In a separate bowl, whisk the milk, maple syrup, vanilla, egg and oil together. Pour into the flour bowl, along with the grated zucchini and chopped chocolate and mix until combined.

Heat some oil in a frying pan over a medium heat. Pour in scoops of batter. When the batter begins to bubble, flip and cook the other side until golden. Repeat until the batter is finished. Top with the maple yogurt.

Mix the ingredients together until combined. Store in the fridge until ready to use.

Serve the pancakes topped with the maple yogurt and a little grated courgette and shaving of chocolate.

For the Maple Yogurt

In a potato ricer or colander, squeeze out as much liquid from the zucchini as possible. In a large bowl, whisk eggs with sesame oil, flour and salt until smooth. Mix in zucchini, carrot and onions.

In a large skillet, heat oil over medium-high heat and add about 1/3 cup of the zucchini mixture, pressing into a pancake about 1/3 inch thick. Sprinkle with hot peppers, pressing into the surface. Repeat with remaining pancakes. Fry, in batches, until golden on the bottom, turning once, about six minutes.

To make the dipping sauce mix together the soy sauce, vinegar, sesame seeds and oil, garlic, onion and pepper. Set the sauce aside while you make the pancakes.

These Zucchini Ricotta Pancakes are light, creamy, and filling, with a hint of lemon and zucchini speckled throughout. Plus, easy! Drizzled with a little honey, they are melt-in-your-mouth incredible!

In a large bowl, whisk together the flour, baking powder, sugar, and salt.

Add in the egg, milk, and butter; whisk until combined and smooth.

Add in the grated zucchini, ricotta, and lemon zest; mix gently to combine.

Warm some butter on a griddle or large flat bottomed skillet over medium heat. Working in batches, scoop 1/4 cup of the batter onto the griddle for each pancake.

Cook until edges are dry and bubbles form on the top, about 3 minutes. Flip and cook until golden, about 2 more minutes. (If pancakes are browning too quickly, turn down the heat to medium-low.)

Serve hot with a slab of butter and a drizzle of honey. Too good!

Korean Zucchini Pancakes<br>(Aehobak Jeon)

Slice the zucchini about 1/4 inch thick. Place the zucchini pieces on a plate and season both sides with salt to taste. After 5 minutes, gently pat dry with paper towels.

Thinly slice the red chili (if using).

Take out two trays and add some flour and beaten eggs. Dredge the zucchini pieces in flour and coat them with the egg wash.

In a non-stick pan, add a splash of oil and wipe off the excess oil with paper towel. Place it over medium-low and add the zucchini one by one.

Once the bottom turns golden brown, put some chilies (if using) on top. Flip and cook the other side. Once they are golden brown on both sides, drain them on paper towels. Serve with hot rice and other side dishes. Enjoy~!
