Step 1
Make the fajita sauce by whisking all ingredients together.
Step 2
Place the sliced vegetables in a large bowl and coat with the fajita sauce. Allow to marinade for a little while in the fridge if you have the time. If you don't, that's OK too - you can go ahead and put them in straight away.
Step 3
Heat the air fryer to 200C / 390F.
Step 4
Coat the marinaded vegetables with a spray of oil and place in the fry basket.
Step 5
Cook for 15 minutes, opening the fryer up to mix the vegetables halfway through.
Step 6
They're ready when the vegetables are juicy and a little bit charred. You may want to cook for another 5 minutes if they're not yet charred to your liking.
Step 7
Serve immediately with warmed tortillas and your toppings of choice.
