Step 1
Start by pre-heating your oven to 180c. Also grease and line a 9 inch square cake tin with baking paper, leave this aside.
Step 2
In a pot, add the butter and dark chocolate. Place this onto medium heat and heat until melted. Leave aside to cool down.
Step 3
In a large bowl, add the eggs and both sugars. Whip these together for about 2 minutes, or until the mixture lightens in colour and increases in volume slightly.
Step 4
Pour the cooled melted butter and chocolate mixture into this, whisk this in.
Step 5
Add the flour, cocoa powder and salt. Whisk just until combined.
Step 6
Pour this batter into your prepared cake tin. Then bake in your 180c pre-heated oven for 25 minutes. It won't be fully baked at this point, this is okay we just want the top to be set.
Step 7
Whiles your brownie is in the oven, make the frangipane.
Step 8
In a large bowl, add the softened butter, icing sugar, vanilla and almond extract. Beat all this together for 5 minutes.
Step 9
Add the eggs and mix these in.
Step 10
Now add the ground almonds, corn flour and salt. Mix just until combined.
Step 11
Once your brownie has baked for 25 minutes, take it out of the oven and spread the frangipane over it.
Step 12
Sprinkle your almond flakes on top of the frangipane, then place this back into your oven and bake for around 30-40 minutes. Just until the top is golden brown and a toothpick inserted into the centre of the frangipane comes out clean.
Step 13
Once baked, leave to cool down for about 20 minutes, then place in your fridge and leave for 1 hour.
Step 14
After an hour, take it out of the tin, dust some icing sugar on top and cut it into pieces. Now enjoy!
