Step 1
Diced 500 g of the apricots and halve the remaining 200g and set aside.

Put the diced apricots in a bowl with the dried apricots, apple cider vinegar, sweetener, cinnamon and rosemary. Toss and allow to sit for 30-60 minutes.

Meanwhile dice the chicken. Heat the olive oil in a large pan. Cook the chicken then set aside.

Cook the onion until it starts to caramelise, turn the heat up high then add the stock or broth to deglaze the pan.

Puree the apricot mix in a blender until smooth. Thermomix, 30 seconds, speed Add to the pan and simmer for 5-10 minutes to thicken.
Step 6
Return the chicken and apricot halves to the pan and simmer for 5 minutes.
Step 7
With rice and salad or vegetables.
Step 8
Re-heat in a pot over a low heat until just hot.
Step 9
Store in an airtight container in the fridge or freezer.
