Step 1
In a large pot, bring 4 cups of water to a boil. Once boiling, add the tea bags and steep according to package instructions. When tea is done steeping, squeeze the water out of the tea bags and discard the tea bags.
Step 2
To make the simple syrup, combine 1 cup of water, honey and apricots in a saucepan. Bring to a simmer and let it simmer on low for 10-15 minutes.
Step 3
When the simple syrup is done, use a fine mesh strainer to strain the apricot syrup into the tea. Make sure you don't let the apricot chunks fall into the tea, they will be very soft and mushy.
Step 4
Once combined, pour the flavored tea into a large pitcher and let it cool in the fridge for at least a couple of hours.
Step 5
Once chilled, pour into glasses with ice, and top each glass off with desired amount of sparkling water for a little fizz.
