Step 1
Place the stainless steel inner pot inside the Instant Pot®. Add 2 tbsp olive oil. Press Saute for 7 Minutes and add the carrots with the garlic.

Once the time is up, add the shrimp, rice, half the green onion, grated ginger, soy sauce, salt, pepper, and 1 ½ cups of water (preferably hot).
Step 3
Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set the time to 4 Minutes. When done, press Cancel and turn the steam release handle to Venting.
Step 4
You can serve it with chopped egg omelet, green onion, and cilantro on top.
Step 5
For the egg omelet: Beat 1 egg with a fork, add green onion and cilantro, put in a hot pan and turn over when cooked. Cut into strips and sprinkle over the rice. You can add raw green onion and cilantro on top to garnish the dish.
