Authentic Pasta Carbonara

(1 pound) spaghetti or linguine

bacon strips, chopped

peas

lemon juice

lemon

eggs,

parsley

Parmigiano-Reggiano cheese

salt

pepper

Parmigiano-Reggiano cheese, optional

We absolutely love this recipe, it super easy and flavorful. I used fresh pasta not boxed, added pancetta ham and some pecorino cheese , a bit more lemon juice . Delicious !

This recipe is tasty and a good one to keep in mind when you need a quick and easy dinner.  Do add 1-2 tablespoons of bacon grease and plenty of warm water from the pasta, reember the pasta will continue to soak up the sauce resulting in a dry dish so add enough water to have it seem very wet initially. And, adding peas is absolutely authentic Italian!   Italy is a big country with many different regions each with their own unique versions of recipes.  I lived in southern Italy for over 4 years and traveled all over the country.  I often found peas included in carbonara at family restaurants!  Pizza ingredients also varied widely in different regions and were quite different from whst we in the USA think of as Italian pizza.

Very good, easy to make, We like a bolder flavor so next time I'll boost peas to 1 1/2 cup, 3 tbsp lemon juice & 2 tsp zest.  Also need to reserve no less than 4 cups of pasta water.

Easy and delicious. I would almost call it an Amalfi-Napoli type take on the dish with the just a taste lemon that may be too strong for more bland pallets. It was fresh and a great summer pasta.

Excellent!!!  I followed the directions just as written and it turned out really good.  I have always used cream when making a Carbonara dish but this was a pleasant change.  Quick and easy which is always nice.

Wow, I made this for a luncheon at work and everyone, and I mean everyone, said it was the best meal ever!  I served it with some shrimp and garlic butter.  I cook a lot and the first time I try a recipe I try to cook it exactly.   I did add some butter (1 stick), to add to it.  But otherwise I stayed true to the recipe.  Definitely will make again  -  so easy!  Thanks!

Carbonara is one of my family's favorite, but this is not it.  Parmesan, romano and crushed red pepper.  no peas, no lemon.  so weird!

Giving it 4 stars because basically this is the same way I've made carbonara for years.  I've never tried using the pasta water, though; I was taught to use butter and olive oil.  I think the addition of peas would be a great idea and plan on doing that next time.   Thanks for the idea!

MY husband and I loved this recipe. It was quick and very tasty. I made it with bacon.  I was worried about all the bacon grease in the pan, but I went with it, and didn’t take any out. I’m so glad I did. It gave it so much flavor. THere was just a hint of lemon flavor. I also added about 1 3/4 pasta water. It was nice and saucy. Will make this again or sure.

I made this as written.  It ended up kind of dry.  I did drain the bacon fat off, which may have been part of the problem (?). I used about a cup of pasta water, but there was not sauce, so to speak.  Tasty, but dry.  Should I have kept the bacon fat?  Used more pasta water?  Thanks.

I cooked the pasta in one pot and the bacon in another skillet at the same time to save time, and it seemed to work OK.   I added the peas per the recipe, then drained the pasta, saving the water, and put it and the bacon and peas all back in the larger pot.  I then followed the rest of the recipe, except I left out the peel and parsley since I didn't have it on hand.  It was really enjoyable and overall pretty easy.

High fat, Carbs. Not flavorful really, blah recipe

Tried tonight and thought it was decent but not much flavor. Tried with ham because that’s what I had on hand but other than that followed recipe

This is a filling dish and so quick to put together.

This was a disappointment.  Easy enough to make but the spaghetti clumped together, making it difficult to blend all of the extra ingredients.  Just blah.  I didn't save the leftovers--wasn't worth it and won't make again.
