Step 1
Preheat the oven to 180ºC (350ºF).
Step 2
Cut the cod into pieces. On a baking dish, place a layer of sliced onion, the cod, the peeled potatoes, the peeled tomato cut into small chunks, chopped garlic, salt, pepper, olive oil and white wine. Bake for about 1 hour and 30 minutes.
Step 3
Turn off the oven, sprinkle with chopped coriander and serve.
