Barbecue Pork and Penne Skillet

(16 ounces) penne pasta

sweet red pepper

onion

butter

olive oil

carton (16 ounces) refrigerated fully cooked barbecued shredded pork

(14-1/2 ounces) diced tomatoes

beef broth

pepper

salt

cheddar cheese

Fixed today. Needed to use Dutch oven. Used 2.5 cups penne and that was plenty. Otherwise followed recipe to the T. My two guys said it was a keeper. That says a lot…lol

We liked this very much. We thought there was too much pasta so next time I may cut back on that. It didn't fit in my large skillet so I mixed it up in a Dutch oven. Plenty for another meal!

I've made this twice using ziti and then penne. Loved it! Followed recipe minus the cumin. Makes a lot so there's enough for leftovers or to freeze.

Have made this multiple times over the past few years and love it every time.  I halve it for the two of us except for the tomatoes which kicks up the heat so be aware ( don’t want to have to store the tomatoes). Have also shared this recipe- popular at my husband’s work

Delicious!  Had LO bbq pork in freezer, halved the recipe for amount of bbq pork and substituted can diced tomatoes and red pepper flakes b/c I didn't have diced tomatoes and green chilies. It still turned out great!  Thank you for this recipe, will definitely make again.

Made this tonight it was excellent. I had put some leftover pulled pork in my freezer and needed to find a way to use it up! I did not have a red pepper, but it was Delicious!

This was great!!! My husband and picky teenage son really liked it. I thought it was delicious also. I don't understand the comment that said it was bland. It wasn't bland at all, in fact it had quite a kick to it and was VERY tasty. I used Lloyd's BBQ Shredded Pork. Maybe they used some other brand? Also I used the Original Tomatoes w Green Chilis and it is more spicy than the mild version. Using what I spent (some ingredients were on sale), I found this meal to be around $1.50 per person which is a real bargain.

This was 10/10....husband and 3 kids licked their plates clean and that is a rare happening, to get thumbs up from the whole family. The leftover pulled pork I used was not nice, noone liked the flavour of the whitlock sauce pouch. This dish disguised it beautifully....will be making again. Also I didnt have penne pasta so I used spaghetti pasta.

I have been making this recipe for a couple of years now.  It is wonderful.  Everyone likes it.  I make it just as it is and use Lloyd's pulled pork BBQ

We fixed this using leftover chunks of BBQ pork spareribs. We also used chicken broth instead of beef broth. It was tasty and simple to put together.

I used my own shredded bbq chicken recipe and subbed in chicken broth instead of beef and I am IN LOVE with this dish! It's so simple and delicious, definitely will be making again!

Wow!  What a good recipe!  We loved it! I made it this morning exactly as written except I used shredded leftover pork roast tossed in some BBQ sauce.  Tasted and added couple of shakes of Worcestershire, 1 Tbsp vinegar and 1 Tbsp dried parsley. I left it for flavors to develop until dinner when I reheated it.  Family loved it!Next time I make it I think I will sub 14 oz can of diced tomatoes for the Rotel.  That way I can control the heat and add hot sauce to taste.

The flavor on this recipe gets 5 Stars. I used gluten-free penne pasta, so that may have affected the results, but I had an issue with the meat balling up with the cheese after I added it. The more I stirred it, the more the cheese attached to the meat, and with gluten-free pasta being fragile, the pasta began to break. Next time I will wait to add the cheese until just before serving and let it melt over the top. I will also chop my barbecue into much smaller pieces because it was pulled pork that had longer strings of meat and that may have prevented the meat and cheese from dispersing evenly throughout the pasta.

This recipe was AWESOME! Great flavor with a nice kick to it. I though it was a little too dry, next time I make it and there will definitely be a next time I will probably put in the whole can of broth. The green onions on top were the perfect accent to the dish. Thanks for the recipe!

Tastes good but seems to be missing something... Question: What does it mean "Barbecued shredded pork"? Does it mean that the shredded pork is mixed with barbecue sauce or does it only mean is was cooked on a barbecue?

Tried it last night for the first time.  My kids werent thrilled because of the peppers but they are still young. Me and my husband thought it was delicious.  We had the left overs for lunch.  Super quick, cheap and easy to make.

This recipe was amazing the only difference i did in making it was use regular onions as i did not have any green but i can not wait to try it with the green onions and green chills
