Step 1
Place wheat grains into mixing bowl and mill 1 min/speed 9. Transfer wheat flour into a bowl and set aside.

Place water and yeast into mixing bowl and heat 2 min/37°C/speed 1.
Step 3
Add oil, flour, salt and reserved wheat flour and mix 6 sec/speed 6, then knead Dough /2 min.
Step 4
Transfer dough onto a silicone bread mat or floured work surface and shape into a ball. Wrap in silicone bread mat or place into a bowl and cover with plastic wrap or a kitchen towel. Set aside to prove in a warm place until doubled in size (approx. 30 minutes).
Step 5
Line a large baking tray (40 x 35 cm) with baking paper. Knock down dough, then divide into 16 equal portions (approx. 50 g each), shape into rolls and place onto baking tray. Brush with a little water and sprinkle with seeds (optional). Place into a cold oven and set temperature to 200°C. Bake for 25-30 minutes (200°C) or until golden brown. Bread should sound hollow when tapped underneath.
Step 6
Allow to cool on tray for 5 minutes then transfer onto a wire rack. Serve while warm.
