Step 1
Heat the oven to 350°F degrees and line a baking sheet with parchment paper.

In a large bowl, beat together the butter, brown sugar, and sugar until light and fluffy.

Add the egg and vanilla to the bowl. Beat until well combined.

Add Bisquick and mix on low until just combined.
Step 5
Mix in the peanut butter.
Step 6
Scoop out tablespoons of dough onto the prepared baking sheet.
Step 7
Press each ball of dough with the tines of a fork, making a criss-cross pattern to flatten the cookie slightly.
Step 8
Bake in the preheated oven for 8-10 minutes, until the bottoms of the cookies are golden brown but the tops are still soft.
Step 9
Remove from oven and allow to cool on the baking sheet for 6 minutes. Then, transfer to a wire cooling rack to cool completely.
