Step 1
Cut the potatoes into a half or small quarters depending on their size. Place in a saucepan, cover with water and add a little salt and boil for 10-12 minutes.

In the meantime, in a large, deep frying pan, add the oil and the onions. Fry for about 5-8 minutes until translucent and sticky. Add the garlic. Half the chillies and throw them in the pan. Continue frying all ingredients for another 2-3 minutes until the garlic cloves get a bit of colour. Add the spices: turmeric, ground coriander, garam masala, fresh ginger and mustard seeds. Mix to coat all ingredients in spices and fry for another 1-2 minutes until it starts to smell aromatic.
Step 3
Tip the tomato sauce and reduce the heat to low. Simmer for a few minutes. Drain the potatoes then add them to the pan. Allow it to simmer until the tomatoes sauce is reduced to a thick sauce. Taste and adjust the seasoning as needed.Remove the halved chillies, scatter with fresh herbs and enjoy hot.
