Step 1
In a large saucepan (or using the saute function in a soup maker), sweat the onions in olive oil until softened.
Step 2
Stir in all the herbs and spices and continue for another minute.
Step 3
Add everything else to the pot except the cheese, xantham gum and sesame seed oil and simmer for 22-25 minutes OR, set to "chunky" on your soup maker.
Step 4
Once cooked, stir in the vegan cheese until melted, xantham gum and serve with a drizzle of sesame seed oil.
