For Cod:

Heat oven to broil setting.

Step 3

Slice one lemon into slices.

Step 4

Cut cod into 4 serving pieces of uniform size (~ 4 oz each) and lightly season with salt and pepper.

Place cod on foil lined baking sheet, top with 1 lemon slice, place in oven on middle rack.

Step 6

Bake for 10 minutes - until fish flakes easily with fork.

For Lemon Olive Caper Sauce:

Zest one lemon (approx. 1 packed tsp) and add to a bowl

Step 10

Juice ½ lemon into a bowl

Step 11

Dice olives and add to bowl, along with capers and olive oil.

Step 12

Whisk together with a fork to mix thoroughly

Roughly chop parsley
