Step 1
Over the stovetop, place the roasting pan with the drippings over low heat.
Step 2
Add the stock and bouillon cube and whisk to dislodge the wonderful brown bits from the bottom of the pan, incorporating them into the stock. You can skim off excess fat, but we leave it in there.
Step 3
Add remaining ingredients except the flour and whisk to combine.
Step 4
Continue to whisk until it thickens slightly, about 10 minutes.
Step 5
Season to taste.
Step 6
Add flour once you’ve reached a flavor profile you love, and only if it needs thickening.
