Step 1
Preheat the oven to 150°C/300°F (fan-forced).
Step 2
In a blender or food processor process the garlic and onion until chopped. Thermomix 5 seconds, speed Add the tomatoes, stock, chipotle, almonds, sultanas, chocolate, spices and sea salt. Process on high for a minute or so until smooth. Thermomix 20 seconds, speed 8.
Step 3
Place the chicken into a casserole dish with a lid or Dutch oven, pour over the sauce and either marinade the chicken overnight, or cook immediately. Cover and bake in the oven for 2 ½ hours (check the liquid mid way).
Step 4
About 30-60 minutes before the chicken is ready, mix the cabbage, spring onion, apple cider, coconut sugar and sea salt. Set aside until just before the chicken is finished cooking then toss through the capsicum and coriander leaves.
Step 5
Shred the chicken into the sauce and stir through with the chopped coriander.
Step 6
With rice or cauliflower rice.

Chipotle in Adobe sauce are available in most big supermarkets or gourmet delis. They are the flavour hero of this dish and give it a little heat and a beautiful smokey flavour (obviously the more you add the spicier it becomes – 1 is still mild, 2 a tiny amount of heat). Once you’ve opened the can, store leftovers in an airtight glass jar in the fridge. They last forever this way and trust me, you will make this meal again! If you happen to have the paste, then 1tsp is about the same as 1 chipotle chilli.
Step 9
If you don’t have chipotle you can sub with a heaped teaspoon of cumin and smokey paprika. This option will have no heat at all. If you only use just one chipotle, perhaps add ½ teaspoon of cumin and smokey paprika too.
Step 10
This can certainly cooked in a slow cooker. However, as the speed and temperature varies between the many brands of slow cookers, base the amount of liquid you add and the cook time on a similar style of recipe in the guide book for your specific slow cooker. The general rule of thumb is to halve the liquid and double the cook time, but understanding your own slow cooker is the best guide.
