Step 1
Partially thaw the chicken sausage and cut it into bite size pieces. Preheat your oven to 375°F and spray a 9x13” casserole dish with cooking spray.
Step 2
Heat a large skillet over medium high heat and add one tablespoon of the oil. Add the chicken sausage and cook for about 5 minutes, stirring to evenly brown, until golden brown. Remove to a plate and set aside.
Step 3
Lower the heat to medium and add 2 tablespoon of oil to the skillet. Add the diced onions and hash browns and cook 5-7 minutes or according to package directions, seasoning with half of the sea salt and black pepper. Cook until light golden brown.
Step 4
In the prepared casserole dish, layer the hash browns and sausage and stir to combine, then top with the dairy free cheddar. In a large bowl, whisk together the eggs, milk, and remaining salt and pepper. Pour over the sausage hash brown and cheese in the casserole dish, and use a spatula or spoon to cover evenly.
Step 5
Bake in the preheated oven for about 25 minutes or until set. Garnish with scallions and serve hot. Enjoy!
