Step 1
Boil water and cook pasta according to directions. Save ½-1 cup of the pasta water for cream sauce.
Step 2
While pasta is cooking, heat up 1 tablespoon extra virgin olive oil.
Step 3
Once heated add mushrooms for 4 minutes stirring constantly.
Step 4
Add red onion & grape tomatoes to mushrooms for 4 minutes.
Step 5
Add garlic, once fragrant (about 2 minutes), add spinach and stir until wilted. Take off heat.
Step 6
In a separate saucepan, add ½ cup of pasta water, cream cheese, and parmesan cheese. Combine over low-medium heat. Use more pasta water if you prefer to have a looser sauce.
Step 7
Combine drained pasta into the skillet with veggies, toss in the cream sauce.
Step 8
Add salt & pepper to taste. Garnish and serve.
