Make batter, combine all dry ingredients: plain flour, rice flour, corn flour, salt, turmeric powder, garlic powder and baking powder

Add in sourdough discard and mix well

Add 2 tbsp water to batter

Beat an egg and add in to batter, add extra water if needed to make a smooth batter

Stir in the vegetables and prawns

Add in 2 tbsp oil and batter is ready

Heat up the oil to 180 degrees celsius
Step 12
Heat a ladle in the oil and once hot, spoon a ladle of batter onto the heated ladle and lower into the hot oil immediately. You should hear a sizzling sound
Step 13
Try to dislodge the batter from the ladle with a chopstick after about 30 - 45 seconds. Repeat with rest of batter. Enjoy this warm and crisp but these fritters do taste good at room temperature too!
