Preheat the oven to 350°F. Grease a 9-inch square pan with cooking spray or butter.

Boil water in a saucepan and add the chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and switch off the heat. Set aside for 15 minutes and grind the mixture to a fine paste.

In a mixing bowl of a stand-in mixer, cream the butter, and sugar on medium speed till they are light and fluffy. Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.

Pour the batter into the greased pan and bake for 35-40 minutes until a toothpick inserted in the center comes out clean.

Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes.

Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes. Grind the dates (along with the water it was boiled in) to a fine paste.

Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet.

Place the bundt pan and close the lid. Adjust the pressure setting to high and the time to 35 minutes.

Once the cooking is done, wait for 15 minutes before releasing pressure.

Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.
