Pre heat oven to 425 and line a large baking sheet,( mine is 15&#215;21 inches) or two smaller pans with parchment and set aside.

Add your cubed potatoes to a pot with a good pinch or two of salt and cover them with water. Bring the potatoes to a boil. Then reduce heat to med high and boil for 5-6 minutes but No longer! Drain the potatoes into a colander. Let them cool for a minute or so. Then add the potatoes back to the pot, just make sure the pot is dry.

Now add in the peppers, onions and half of the seasoning mix  and stir everything together.

Spray your parchment lined baking sheet evenly with  oil. Now add your potatoes and peppers to the greased parchment and spread them in an even layer. Try not to crowd them or they won&#8217;t get as crispy. Next spray the tops of them evenly with oil. Now give the pan a little shake .

Bake the potatoes and veggies for 20 minutes. After 20 minutes remove them from the oven, give them a quick stir then return them to the oven to bake for an additional 15 minutes. (35 minutes total baking time).

When the potatoes are done remove them from the oven and add the rest of the seasoning and stir to combine.

Buttermilk dosa recipe

Whisk the yogurt with water to make buttermilk.

Wash and rinse the rice and soak the rice and methi seeds in buttermilk until the rice is completely immersed. Add more water if needed to completely soak the rice. Let it soak for 3-4 hours.

Drain the rice and reserve the liquid. Using this reserved liquid, grind the rice and methi seeds along with the coconut and cooked rice to a thick and fine paste. Let this mixture ferment for 5-6 hours.(Note: if you accidentally added too much liquid, add tablespoons of rice flour at a time to thicken the batter)

Heat a heavy bottomed pan for 2-3 minutes on medium to low heat. Grease it with clarified butter.

Using a ladle to scoop the batter and pour it into the pan. Cover the pan and let the dosas cook for 3-4 minutes. Uncover the pan. At this point, bubbles would have started to form and pop.

Flip the dosas on the other side and cook for a minute or two. (Note: if you notice that the dosa is not soft and spongy, add 1/2 teaspoon of baking soda to the batter and mix well).

Serve immediately with chutney or kori rassa.

Preheat the oven to 350F.

In a medium-size microwave safe bowl, place the 1 ½ cups of mozzarella and 2 tbsp of cream cheese. Microwave for 45 seconds. Mix with a rubber spatula and microwave again for 20 seconds.

Add 3 tbsp of monkfruit sweetener, 1 cup of almond flour, and 1 beaten egg. Mix with the spatula until all is well combined and no egg is showing.

Divide the mixture into 4 even pieces. Create long cylinders with each piece and create the pretzel twist.

Place in the parchment paper and bake for 15-20 minutes or until golden brown.

In a small bowl, mix 3 tbsp of melted unsalted butter, ½ cup of monkfruit sweetener, and 2 tbsps of ground cinnamon.

Cool the pretzel for 5 minutes before applying an even coat of cinnamon sugar.

In a small bowl, soften the cream cheese and sift the powdered monkfruit sweetener. Mix in the water and vanilla extract until smooth. Adjust water content for the desired consistency.

Boil water in a saucepan and add the chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and switch off the heat. Set aside for 15 minutes and grind the mixture to a fine paste.

In a mixing bowl of a stand-in mixer, cream the butter, and sugar on medium speed till they are light and fluffy. Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.

Pour the batter into the greased pan and bake for 35-40 minutes until a toothpick inserted in the center comes out clean.

Remove from the oven and let the cake cool in the pan before dusting it with powdered sugar

WITHOUT using a Blendtec Blender

Boil water in a saucepan and add the chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and switch off the heat. Set aside for 15 minutes.

Add eggs, butter, vanilla extract and sugar to the blender jar and secure the lid. Select "Batters" and run the cycle twice or blend on a Medium to Medium-Low speed for 60 seconds.

Add the date-water mixture and select "Smoothie" or blend on a Medium to Medium-Low speed for 60 seconds

Add the remaining ingredients - both flours, baking powder and salt in the blender and secure lid. Press "Pulse" 3–5 times or until dry ingredients are combined with the wet.

Remove from the oven and let the cake cool in the pan before dusting it with powdered sugar.

Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil.&nbsp;Add chopped dates to it and let it cook for 5 minutes.&nbsp;

Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes. Grind the dates (along with the water it was boiled in) to a fine paste.

In a mixing bowl of a stand-in mixer, cream the butter and sugar on medium speed till they are light and fluffy.&nbsp;

Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.

Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil.&nbsp;

Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet.

Place the bundt pan and close the lid. Adjust the pressure setting to high and the time to 35 minutes.&nbsp;

Once the cooking is done, wait for 15 minutes before releasing pressure.

Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.

In a mug or bowl combine the chocolate cake mix, water, and oil. Mix well with a fork.

Microwave the mug for 1 minute 30 seconds to 1 minute 45 seconds. Check it with a toothpick, when it comes out clean it is ready.

A small bowl measurement will take about 1 minute.

Top with whatever you like such as, frosting, sprinkles, powdered sugar, etc.

Welcome back to In the Kitchen with Matt, I am your host Matt Taylor. Today I will show you how to make a mug cake or a bowl cake. Mug cakes are really easy to do, takes about 2 minutes and only 3 ingredients. Awesome! Have you ever had the urge to eat cake, but you didn’t want to make a whole cake, because you didn’t want to be tempted to eat a lot of it, or didn’t’ want part of it to go bad, because you couldn’t get to it. Where here you go, make a mug cake. It’s really easy to do, all cooked in the microwave, let’s get started. We start with our cake mix, you can use whatever cake mix you want, and I am using a chocolate cake mix. And we are going to use 3 tablespoons of cake mix, 2 tablespoons of water, and 1 teaspoon of canola oil or vegetable oil. Give that a good mix, ok so you mix it so it is nice and done like that. Okay now I am going to do the one for the mug. Now the mug, I am going to add more to this one, so I am going to do, I am going to double the recipe. So 6 tablespoons or a quarter cup plus two tablespoons of cake mix. Okay. 4 tablespoons or a quarter cup of water, then 2 tsps. of canola oil or vegetable oil, take a fork and we will give it a good mix. And you can spray these with kitchen spray if you want, the inside, but it is not completely necessary. But you can if you want. All right once they are nice and mixed, all we do is put them in the microwave. The bowl goes in for a minute, on high for a minute, the cup goes in for about a minute and a half to a minute 45 seconds. And the way you tell when it is done is push a toothpick in there, and make sure it comes out clean. All right on to the microwave. All right when they come out of the microwave they will look like this. And now you put whatever toppings you want on there. For this little bowl one, I am going to use powdered sugar, like that. For my mug, I am going to take some frosting, and put it in this bag that I have a little tip on it, and I am going to just go ahead and put some frosting in the middle. And maybe I will even do some on the edges, like if you want to hide the edges where it is pealing apart there. Just kind of go around the edge. And I am going to put some sprinkles on there. There you go, fantastic. And that is how you make a mug cake or bowl cake. Really easy to do, 3 simple ingredients, took two minutes, cooked in the microwave, awesome. If I can do it, you can do it. In a bowl, whisk sugar, brown sugar, vanilla extract, and butter together until creamy.

Add Greek yogurt, egg, and bananas. Mash bananas and mix thoroughly.

Soft 100% Whole Wheat Dinner Rolls

active dry yeast* (instant works, too)

butter (softened)

Dissolve the yeast in the 1/2 cup warm water in a glass measure. Set aside.

Cream the butter and honey in the bowl of a stand mixer with the paddle attachment. Add the eggs and mix, scraping the sides. Add the warmed milk along with the yeast mixture.

Add 4½ cups of flour and the salt, mixing until combined. Change to dough hook and knead for 2-3 minutes only, just until no longer tacky, adding a tablespoon or two of flour at a time, if needed. (Do not add too much.)

Let sit in bowl, covered, to rise for one hour. Turn out onto a floured surface and knead a couple of times, then let rest 3 minutes.

Divide into 24 equal pieces, shaping each into a ball and placing in a buttered 13x9-inch baking dish with the pieces touching.

Let rise, covered for 1 hour.

Preheat oven to 350 degrees.

Bake for 20-25 minutes until golden brown.
