Dipped Peanut Butter Sandwich Cookies

round butter-flavored crackers

white, semisweet or milk chocolate chips

shortening

I used Ghirardelli dark chocolate melting wafers instead of chocolate chips.  I used a tip a saw for dipping chocolate.  I took two plastic forks, cut off the two middle tines of the forks and used the forks them for dipping into the chocolate.  Makes the dipping so easy with no mess.  I make these for my grandsons.  They love them.  Tastes like a reeses peanut butter cup to me.  YUM

My mom makes these every year for Christmas. This cookie recipe is even slightly more complicated than her version - she doesn't use shortening and just melts the chocolate in the microwave. Either way, you get a quick and tasty dessert that's easy to transport and share! PLUS the peanut butter fills you up a bit more than just sugar cookies do.

My son turned me on to these cookies over the holidays.  He had some at a friend's house and raved about them.  He told me how they were made, but it seemed to simple - it just couldn't be that easy.  Well, I was wrong!  After looking on the internet, I found this recipe, which matched what he told me.  After making them, I definitely know why he raved!!  These are great!!  I've made them several times since the holidays (and this is only March), and I'm making them again this weekend.  YUM!

My family started making these almost 30 years ago. Perfect for Christmas gift giving. Skip the shortening, though. Just use almond bark...a little healthier that way. :) We melt the chocolate in a big glass bowl in the microwave and dip with 2 forks. Using a glass bowl lets us warm up the chocolate as needed throughout the process. So easy

I received these as a gift many years ago, now they are one of my favorite things to make and give for holiday parties as a hostess gift  or to new neighbors. These never disappoint.

These were really good. Definitely a keeper. I used dark chocolate chips, just because we really like dark chocolate. They were yummy.
