Step 1
Heat oven to 300 degrees F. Line baking sheets with parchment or use a silpat.
Step 2
In a stand mixer or with an electric mixer in a large bowl, cream the butter, sugar, and brown sugar on medium speed for about 2 minutes.
Step 3
Add eggs, vanilla, and lemon juice. Beat for about 2 minutes or until light and fluffy, scraping down the sides of the bowl.
Step 4
With mixer on low speed, add in the flour, oats, baking soda, salt, and cinnamon, mixing until just blended. Do not over mix.
Step 5
Remove bowl from mixer and stir in chocolate chips and walnuts.
Step 6
Portion out about 3 TBSP dough per cookie (A small ice cream scoop works well) and place on prepared baking sheet about 2 inches apart.
Step 7
Bake for 20 to 23 minutes, or until edges start to get golden brown and center is still soft.
Step 8
Remove from oven and cool on baking sheet for about 1 hour. Store in airtight container. These baked cookies freeze well.
