Line an 8x8 baking dish with wax paper.
Step 2
In a dry pan with no oil add one cup of shredded coconut. Cook coconut on medium heat for 5-10 minutes. Stir often until coconut is golden brown. Remove from pan and let cool.
Step 3
Using a heavy bottom pan on medium heat melt together sweetened condensed milk, semi-sweet chocolate chips and a pinch of salt.
Step 4
Once melted and combined stir in vanilla extract and 1/2 cup of toasted coconut.
Step 5
Pour fudge into your wax lined pan. Smooth out with a silicone spatula. Sprinkle remaining coconut on top of the fudge. Press down with your fingers and add in Cadbury mini eggs.
Step 6
Let chill in the fridge for 2 hours. Remove from pan and cut into small squares and enjoy!
