Step 1
Prepare an 8x8 or 9x9 inch casserole dish with parchment paper spritzed with nonstick cooking spray.
Step 2
Place half of the mini eggs into the bottom of the casserole dish.
Step 3
Place chocolate chips, condensed milk, and butter into a microwave safe bowl.
Step 4
Heat, uncovered, in the microwave for 1 minute.
Step 5
Stir vigorously, allowing the residual heat to help melt the chocolate. If needed, return the chocolate to the microwave and stir every 15 seconds until the chocolate has melted. Do not overheat the chocolate as it will seize up.
Step 6
Pour the fudge over the mini eggs, pressing it down into an even layer between the eggs.
Step 7
Press remaining eggs into the top of the fudge.
Step 8
Refrigerate your Easter Fudge overnight.
Step 9
For best results, bring to room temperature before cutting or use a knife heated with warm water and wiped dry to slice. Cut into squares.
