Step 1
In a large bowl, beat together the cake mix, eggs and oil for 2 minutes until well combined.
Step 2
Cover with plastic wrap and place the dough in the fridge for 1 hour.
Step 3
Pre-heat oven to 350F.
Step 4
Line two baking trays with parchment paper or silicone baking mats.
Step 5
Use a cookie scoop to portion out the chilled dough onto your prepared cookie sheets, at least 3" apart.
Step 6
Bake for 7-9 minutes, until spread, cracked on top and puffed up. They should not start to brown.
Step 7
Allow to cool for 2 minutes on the baking sheets before removing to a cooling rack to cool completely.
Step 8
If you are icing the cookies use your favorite store-bought or you can make your own icing.
Step 9
Keep cookies in an airtight container at room temperature for up to a week or freeze them for longer storage.
