For Chia Jam

1)In a small bowl, add your frozen berries and microwave until defrosted and juices are running freely. Give the berries a good stir to release the juice.

2)Add the chia seeds and erythritol and mix very well.

3)Put into the refrigerator for a minimum of 3 hours or ideally overnight.

4)When your chia jam is ready you can make the danish.

For the danish pastry

1)In a food processor add almond flour, coconut flour, xanthan gum, baking powder and salt to food processor. Pulse until thoroughly combined.

2)Pour in lemon juice and the egg, followed by the water.
Step 9
3)Stop the food processor once the dough forms into a ball. The dough will be sticky to touch.
Step 10
4)Wrap dough in cling film and knead it through the plastic for a minute or two. Allow dough to rest for 10 minutes (and up to 3 days in the fridge).

For the danish

1)Preheat your oven to 180 degrees celsius.

2)Roll out your Danish pastry to one centimetre thickness, and forming a good size rectangle shape, then cut diagonal strips on either side of the ‘filling’ edge being sure to left a flap at the top and bottom of the pastry (check the video for detailed instructions).

3)Lay the chia jam filling first within the filling edges

4)Drain the cherries and then sprinkle the cherries on top of the cherry jam

5)Bring the flaps into the centre, pinching together to form the danish (see the video for clear instructions).

6)Bake for 20-30 minutes or until the pastry is golden and crispy.

7)Serve immediately with some vegan cream on the side.
