Easy Dutch Oven Minestrone Soup

beef broth

(24 ounces) marinara sauce

vegetables,

(15-1/2 ounces) navy beans, rinsed and drained

frozen fully cooked Italian meatballs, thawed

spinach,

(9 ounces) refrigerated cheese tortellini

Parmesan cheese

Simple, easy and filling! Plenty of leftovers for my husband and I. I would make this one again.

This soup was easy but I did make a few changes.  Our family doesn't like frozen mixed vegetables so I used peas and a cut up carrot and used  a can of corn.  I felt this would substitute for the 3 cups of frozen mixed vegetable..  I used my homemade meatballs I keep in the freezer.

I can see why this recipe is a contest winner. It is so easy to prepare and really tasty. I had frozen peas and fresh carrots and onions on hand, so that's what I used. My tortellini was filled with spinach and cheese. My husband loved the meatballs in the soup. Great meal to warm you up on a cold day!
