Step 1

Prepare mushroom caps by gently brushing any dirt away (do not use water as it will make the mushrooms soggy). Gently twist the stems out and reserve for another use (like a breakfast scramble the next morning!). Slice the mushrooms into ½” thick strips. Place the mushrooms in a large dish while you prepare the marinade.

Step 2

Combine all the marinade ingredients. You can either finely chop the ginger, garlic, and chilli or add all the ingredients to your blender to create a smoother marinade.

Step 3

Pour the marinade over the mushrooms and gently turn them to make sure the marinade coats all sides. Allow the mushrooms to sit in the marinade for at least 10 minutes.

Step 4

Heat a grill pan on medium high heat (you want to make sure it’s hot enough that the mushrooms sizzle). When ready, add the mushroom strips (careful, the oil in the dressing may spray if the pan is too hot). Add as many mushroom strips as can comfortably fit in your pan without overcrowding.

Step 5

Grill on both sides for 3-5 minutes. You should have nice grill lines, a softer centre and nicely charred and crispy edges.

Step 6

Serve immediately with desired sides like mashed potatoes and steamed veggies. Serve over rice or noodles for an Asian inspired dish. Or, load up these fajitas!
