Salad Prep: Chop and prepare all the fresh vegetables. Dressing: Whisk together all of the salad dressing ingredients. Set aside. 2 tablespoons extra virgin olive oil, 1 tablespoon red wine vinegar, ½ tablespoon oregano, dried (or 1 tablespoon fresh), 1 teaspoon dijon mustard, salt and pepper to taste
Step 3
Toss: Evenly pour the dressing over the salad, sprinkle with fresh lemon juice and toss. Serve as either a side salad or a main meal.
