Heat up 1 tablespoon of olive oil in a medium saucepan over medium-high heat.

Add the diced onions and sauté in the hot oil until translucent.

Add the minced garlic to the saucepan and stir until fragrant.

To the same saucepan, add the tomato puree, dried Italian seaoning, and salt.

Cover the saucepan with a lid and simmer for 5 minutes. Add 1 cup of filtered water and simmer until it has thickened again (approximately 20 minutes). (Pro Tip: Longer simmering will result in better flavor as it reduces the acidity provided by tomato puree, so make sure to let the sauce simmer!).
Step 6
Use the sauce straightaway, or pour it into an airtight container and store in the refrigerator for up to 3 days.
