Step 1
In a large saucepan or Dutch oven, heat the cooking oil until it reaches 375 degrees Fahrenheit (190°C). Use a kitchen thermometer to check it's accurate.
Step 2
Mix the extra-virgin olive oil and lemon pepper seasoning in a large bowl. Set aside.
Step 3
Pat the wings dry with a paper towel.
Step 4
Drop the wings into the hot oil and fry in batches for about 7-8 minutes. Use a meat thermometer to check each wing reaches an internal temperature of 165 degrees Fahrenheit (75°C).
Step 5
Place the cooked wings on a wire baking rack and continue frying until all the wings are done.
Step 6
While they're still hot, toss the wings in the lemon pepper and olive oil mixture.
Step 7
Serve with lemon wedges and sauce if desired. Then dig in!
