Step 1
In a large bowl mix together ricotta cheese, mozzarella cheese, parmesan cheese, spinach and egg.
Step 2
Scoop tablespoon sized scoops in the middle of each wonton wrapper. Fold the wonton wrapper in half and brush edges with water while using a fork to press down the edges to seal. Set aside and continue doing this for all 48 wonton wrappers.
Step 3
Preheat oven to 375 degrees. Place wontons on a cookie sheet that has been sprayed with non-stick spray, making sure they aren’t touching. Bake for 15-16 minutes or until edges are brown and crisp. Remove from oven and serve with your favorite pasta sauce. Garnish with fresh basil on top.
Step 4
Place wontons on parchment lined cookie sheet. Continue to do this until cookie sheet is filled. Sprinkle ravioli with a little bit of flour (this prevents them from sticking together), add a new piece of parchment paper on top and continue filling up the next layer. Put in freezer for 1 hour. Remove ravioli from freezer and place in freezer bags, put back in freezer until ready to eat. When ready to serve remove frozen ravioli from freezer and preheat oven to 375 degrees. Place wontons on a cookie sheet that has been sprayed with non-stick spray, making sure they aren’t touching. Bake for 18-20 minutes or until edges are brown and crisp. Remove from oven and serve with your favorite pasta sauce. Garnish with fresh basil on top.
