Step 1
Bring a large pot of water to a boil, then add the pasta. Cook until al-dente and then strain.

Meanwhile, in a large deep skillet, heat the olive oil on medium-high heat and add the garlic and mushrooms. Cook, stirring occasionally until the mushrooms have browned and softened, about 10 minutes.

Add the grape tomatoes and cook, stirring often until the tomatoes have burst and softened, about 8 minutes. Turn heat to medium-low, add the sun-dried tomatoes and kale, and stir frequently until the kale has wilted. Add the tomato paste and paprika and stir to combine.
Step 4
Pour in the tomato sauce and season with the salt and a pinch of pepper. Mix everything to combine and bring to a low simmer. Optional to add more salt and pepper to taste, and more olive oil to drizzle for richness. Then add the cooked pasta and mix everything to combine.
