Step 1
Place the onion and garlic clove in the mixing bowl. Blitz 3 Sec. / Speed Scrape down. Add the olive oil and fry 8 Min. / 120°C / Speed Leave to cool in the bowl for 10 minutes.

Then, add the sage, chilli flakes, dried oregano and black pepper and blitz 2 Sec. / Speed Add the sausage meat and feta cheese and combine 10 Sec. / Speed Transfer into a bowl.
Step 3
Meanwhile, preheat the oven to 200°C / 180°C Fan / Gas Mark Line two large baking trays with greaseproof paper.
Step 4
Place one piece of puff pastry on a lightly floured surface. Cut in half lengthways. Place 1/4 of the sausage mixture along the length of the pastry rolled into a sausage shape about 2cm wide. Brush the edges with a little egg and then fold over the pastry to encase the filling, leaving a small lip of pastry. Press down slightly, then press a fork into the lip of pastry to make a neat pattern and close it off. Repeat this with the other half of the pastry and the other sheet of puff pastry until everything is used up. You should end up with 4 large pastry rolls.
Step 5
Chill for 10 minutes, then cut into large sausage rolls or mini sausage rolls, depending on your preference. Brush with egg and place neatly on the prepared baking trays.
Step 6
Sprinkle with a little salt and chill again for 10 minutes. At this stage, if you are making them ahead, you can leave them in the fridge until the next day when you are baking them or you can freeze them. make sure to brush them with egg just before baking if you decide to make them ahead.
Step 7
Bake in the oven for 20 minutes until golden brown and fluffy. Remove and leave to rest for a couple of minutes before serving. Enjoy!
