Step 1
Preheat oven to 350F. Place muffin liners in muffin tin and grease with cooking spray.
Step 2
Place peanut butter, maple syrup, pumpkin, eggs, and vanilla in a medium mixing bowl. Whisk until smooth.
Step 3
Add cocoa powder, flax, baking powder, salt, optional pumpkin pie spice, and chocolate chips. Whisk again. It will be very thick!
Step 4
Spoon batter evenly into liners, filling 3/4 way full. You will get 10 muffins. Bake for 18-20 minutes, or until a knife comes out clean. Cool on a wire rack for 15 minutes. Devour!
