Funfetti Lush

Step 1

Grease a 9x13-inch baking dish with nonstick spray. Set aside.

Step 2

Using a food processor, pulse sandwich cookies until they are fine crumbs. You can also place cookies in a large ziploc bag and crush them with a rolling pin or heavy glass.

Step 3

In a large bowl, mix together the cookie crumbs, salt, and melted butter until well combined. Press cookie mixture into a prepared pan and chill in refrigerator or freezer until hard.

Step 4

Meanwhile, in a medium bowl, combine cream cheese, powdered sugar, Funfetti cake mix, and 4 oz of the whipped topping, and beat with electric mixer until smooth. Fold sprinkles in gently and spread over cookie layer in pan.

Step 5

In same bowl, combine pudding mix, milk, and 4 oz of whipped topping. Beat with electric mixer for 2 minutes. Spread over cream cheese layer in pan.

Step 6

Spread remaining whipped topping evenly over the pudding layer and chill until set, at least 4 hours and up to overnight. Top with rainbow sprinkles, slice, serve, and enjoy!
