Step 1
Set the oven temperature to 350 degrees F. Spray cooking spray on a large baking dish.
Step 2
Remove the peppers' tops and cut out the ribs and seeds inside.
Step 3
Put the peppers in the baking dish with the cut side down. 1 1/2 cups of water should be added to the dish.
Step 4
Cover the dish with foil and bake it for 25 minutes.
Step 5
Prepare the filling while the peppers are cooking. In a large pan, heat the olive oil over medium heat.
Step 6
Add the ground beef and salt and pepper to taste.
Step 7
Cook the meat for 5 to 6 minutes, breaking it up with a spatula, until it is done.
Step 8
Add the onion to the pan and cook for 3–4 minutes, or until it has softened. Cook for 30 seconds after adding the garlic.
Step 9
Mix in the rice, tomato sauce, and Italian seasoning. Stir in order to mix. Mix in a half cup of cheese, salt, and pepper to taste.
Step 10
Take the peppers out of the oven and pour the water off of them. Flip the peppers over and put some of the beef mixture in each one.
Step 11
Put the rest of the cheese on top of each pepper. Cover and bake for 20 minutes. Remove the cover and bake for another 10 minutes, or until the peppers are soft and the cheese is melted and browned.
Step 12
Sprinkle parsley on top, and then serve.
