Preheat oven to 400 degrees.

Cover a sheet pan with aluminum foil and set aside.

Chop the sweet potatoes, zucchini, and onion. Place in a large mixing bowl.

Add 1 tbsp of avocado oil. Stir until everything is well coated.

Spread evenly over the baking sheet. Sprinkle with salt and pepper.

Place the sheet pan in the oven and bake or 30 mins, flipping half way.

After the veggies have been baking for 15 mins, heat a large skillet on stovetop.

Add turkey and garlic. Cook until the meant is browned. Sprinkle with salt and pepper.

Once the veggies are done, take them out of the oven and add them to the skillet.
Step 10
Stir in spinach.
Step 11
Sprinkle cheese evenly over the top of the skillet.
Step 12
Cut the heat to low. Place a lid over the skillet. Let sit for 10 minutes or until cheese is melted.
