Step 1

Preheat oven at 180C. Grease and line a lamington tray.

Step 2

Melt butter in a frying pan and sauté onion, cauliflower, pumpkin, zucchini and carrot. Set aside and allow to cool.

Step 3

In a bowl add eggs, milk, beat until combined. Add corn, cheese, peas, flour and seasoning to the egg mixture and stir to combine.

Step 4

Pour mixture into a lamington baking tray, bake for approximately 40-45 minutes or until crust forms and top is brown.
