Step 1

Combine dried herbs in a muslin tea bag. Alternatively, you can use a store bought herbal tea blend for respiratory or throat health.

Step 2

Place tea bag in eight ounces of boiling water and allow it to steep, covered for about 20 minutes. Remove the tea bag and compost the herbs.

Step 3

In a medium, heavy-bottomed saucepan, combine honey, freshly grated ginger, lemon juice, and herbal tea and bring to a boil over medium-low heat.

Step 4

Once boiling, stir constantly using a wooden spoon, removing from heat briefly when foaming to reduce foam before returning to heat. Using a candy thermometer, heat the mixture to 300°F.

Step 5

Once the mixture reaches 300°F, remove from heat immediately and stir in peppermint extract. Allow the mixture to cool for a few minutes until it thickens slightly.

Step 6

Using a pre formed candy mold carefully pour the mixture in the mold. Alternatively, you can drop the mixture by the teaspoonful onto a silicon baking mat or wax paper.

Step 7

Allow the candy to cool and harden completely before dusting in a mixture of cinnamon, cocoa, and cayenne pepper or powdered sugar.

Step 8

Wrap each individual drop in a piece of wax paper and store in a cool, dry place until ready to use.
