Step 1

Start by patting your beef cubes dry with paper towels - this helps them brown better. Season generously with salt and pepper.

Step 2

In a large skillet over medium-high heat, melt 2 tablespoons of butter. Working in batches (don't crowd!), quickly brown the beef on all sides. You're not cooking it through, just developing flavor. Transfer browned beef to your slow cooker.

Step 3

In the same skillet, add remaining butter and reduce heat to medium. Add diced onion and cook until translucent (about 3-4 minutes). Then add minced garlic and cook just until fragrant, about 30 seconds.

Step 4

Pour in beef broth and Worcestershire sauce, stirring to scrape up all those flavorful brown bits from the pan bottom. Let simmer for 1 minute.

Step 5

Pour this garlic butter mixture over the beef in your slow cooker. Sprinkle Italian seasoning and paprika over everything, then give it all a gentle stir.

Step 6

Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is fork-tender but not falling apart. You want these to be bites, not shreds!

Before serving, taste and adjust seasonings. Garnish with fresh parsley for a pop of color and freshness.
