Holiday Salad

lemons, juiced, plus 1/2 lemon

sea salt

black pepper

extra-virgin olive oil

green apple, peeled, cored, and cut into 1-inch cubes

avocado, diced into 1-inch cubes

corn kernels

In a small bowl whisk together the lemon juice, salt, pepper and olive oil. Set aside.

Put the endive and apples into a large decorative serving bowl. Squeeze the juice of half a lemon into the bowl and toss to coat the endive and apples so they don't turn brown. Add the cheese and avocado, and then add the cranberries and corn.

Pour the dressing over the salad just before serving and toss to coat.

I made this recipe for Thanksgiving. Twelve people, NO ONE liked this recipe. It was just weird. 

This salad is excellent as suggested. However, if your lemons are large you may want to add a bit less than 1/2 lemon on the endive and apple.  

I was so excited to make this salad for Christmas because she sold me on how wonderful it was. NOBOODY liked it. It sat on the Christmas table mocking me! It was just too weird. It was such a weird combination of flavors that didn’t work. So disappointed!!! 

This is really good—a wonderful mix of flavors and lighter than most “holiday” salads. I’ll be making again!

Positively one of my favorite salads ever! My family and I have been making this over the past couple years and we tried with the endive and with Romaine and like both versions. I make it all year around...Love it!

While I like the lemon, others thought it was too lemony.  I thought it was a bit bland.

I love this salad. I usually do not like to repeat recipes, but this one I could do every week and not be tired of it.  The clean taste the lemon juice gives it as well as the different textures in the salad(especially the crunchy endive makes this one recipe I will do often. For those who think the endive is too bitter, be sure to get the palest ones possible.  The greener they are the more bitter! It is not necessary to use the 1/2 lemon for the apples and avocado as the recipe suggests. Just mix all the ingredients together. It is even good the next day. Stays crunchy. Sometimes I add a little baby spinach. 

It's a little bitter, so I added some balsamic vinegar to the mix and it sweetened it up!

Made this salad with romaine instead of endive..it was great!!  Could eat it all the time!

I really wanted to like this but I just couldn't get there.  I saw it on an Giada's Family Christmas in Aspen and went searching for the recipe (because it's only mentioned on that show, not actually made on it and was excited when I found it.  I love all of the ingredients on their own, but the combination of them didn't work for me, seemed a little too bitter or sour or something like that.  I really like pretty much everything I've ever made from Giada, but this one just wasn't my favorite.

I know this is a holiday salad, but I use it throughout the year. So yummy and I love the bitterness of the endive paired with the sweetness of the cranberries. Yummy!

This is the best!  So FIVE STAR to me that I just don't get why its reading only 4 stars, so I registered and gave it 5 stars.  I'm wondering how many of us are loving this but just don't rate it!

This salad is amazing - I make it every holiday or when I am having guests over.  It is always a crowd pleaser.  I use romaine though instead of endive.  Very easy - just a lot of ingredients - but worth it!

I made this salad years ago for Christmas dinner and loved it.  Somehow, I didn't prepare it again until today.  I really missed a lot over those interim years.  It is incredible!  I varied the recipe slightly.  I started the dressing with the juice of 1/2 a lemon and added more until I got the taste I wanted.  I always use only about half the dressing a recipe makes, and this was no exception.  Then I added a small amount of baby lettuce to give more contrast to the color appeal since your first taste of any dish is with your eyes.  You can bet I won't wait years to serve this again!

I have made this salad for a couple years since it first aired.  It is always a hit.  The endive is a little bitter for us, so I modfied and made the salad with romaine.  Delicious!  Thanks Giada.

I made this for the holidays and my family could not get enough. I tried making it with the lemon dressing once, but it was a bit too bitter for me. So I made a basic honey dijon and threw that on there. It was fantastic.

The combination of textures is good, but there simply is no flavor.  Each ingredient is mild, so the culmination is lifeless.

This is such a light and wonderful salad! I can't get enough of it! Every bite is a taste explosion! It is never the same taste twice. Try it and decided for yourself! I can't just save it for the holidays, it's too good!

This is a great salad if you love trying new things.  It is crisp, refreshing and a great balance of flavors.  I did not use all the of the dressing as I felt it would overpower the dish.  I served this at Christmas and it went over very well.  The only problem with this great salad is that it probably would not work for picky eaters..you would need to offer something else.  But even for an every day salad this would be a lite, healthy dish.

I prepared this salad exactly as listed.  It made a huge amount of salad (I question the "serves 4" listing...more like 14!).  As listed, the salad dressing was very bitter/sour from the lemon juice.  The problem with using fresh lemons is they come in all shapes and sizes, so I probably got more juice than intended.  I was able to save the salad from being inedible by adding sugar and tossing.  It wasn't bad after that..the ingredients and the cheese gave a nice texture.  Don't think I'd make this again with this vinaigrette.

I really liked Giada's corn, tomato and avocado  salad with lime dressing so I thought I'd like this too.  I made it for Christmas and most of it was left over.  I wouldn't make it again.

I made half a recipe of this salad for dinner tonight.  My husband and I finished the entire bowl!!  The flavors were in perfect balance, and so fresh.  Wonderful!

At our home we all enjoy this salad.  It is beautiful to serve, with a delicious flavor and a great mix of textures.  What I do since I know that Belgian endive is bitter is that I combine 1/2 endive and 1/2 boston or field greens.  Try it!

The flavor combinations were interesting.  I probably would not serve it to dinner guests.  It lacked sophistication and would not wow my guests.

I love this recipe!! When I saw Giada make this I just had to try it. I have to admit that my very first impression was that is was a little bitter, but when i made it the second time, me and my husband just loved it. I do make add a little more cranberries. I made this for a Sunday dinner to go with Lasagne after watching Giada's show with my husband. Everyone loved it and it was easy to make even though some of the ingredients were a little harder to find! This will become an easy staple and is light enought to work throughout the year.

This salad ruined my Thanksgiving. It was completely inedible - a medley of bitter and sour, and nothing else. What a dissappointment.

I first made this for my in-laws and my mother in law raved about it. I wasn't able to find arugula so used mixed greens instead...wonderful!  I have since made it for my family and even my husband likes it. This is a keeper that I will make over and over again.

We made this for food-loving friends and it was a total disappointment.We used Meyer lemons in the dressing which added a little more sweetness, added a little sugar and increased the amount of all the ingredients except the endive, but not only was it relentlessly bitter, it was visually dull.

I was very disappointed with this recipe and quite surprised that so many others actually enjoyed it.  I generally love Giada's recipes, especially since I grew up eating many of them in my Italian-American home.  I do like Belgian endive, but it is quite bitter. (When I want bitter, I enjoy the bitter greens like broccoli rabe, but the enive is admittedly not my favorite bitter vegetalbe and perhaps that is why I don't care for this salad) I LOVE the rest of the ingredients and thought this salad would be terrific.  Instead, it was way too lemony and bitter.  I was really, really disappointed.

Thank goodness I tried this out on my husband before serving it at a holiday luncheon.  The ingredients seemed intriguing, but something is amiss.  Lemon is the quantity stated is overpowering, cranberries pretty but almost icky sweet compared to the tart green apple and the bitter endive.  I had hoped for more.

I love trying new salads, and this one sounded so good! However, it was so bland. Maybe a different dressing would help. I made it for a party, and it was  hardly touched.

I read this receipe last night and was intrigued, but I just couldn't imagine how it would all come together. Endive was there at the market today, and some wonderful French cheese that is similar to guierre. My hubster suggested adding a bit of gorgonzola cheese, and WOW. Not a lot, mind you, just enough to pack the punch. This is a very subtle salad, visually. Everything is pale green/off-yellow. But with the bright note of lemon and fresh pepper, it was crunchy, rich, and tasted decadent! A real winner.

I have made this salad probably a dozen times since I first tried it.  Everyone loves the flavors, textures and color.  Don't let the name Holiday Salad keep you from trying it for dinner tonight. Yummm.

The ingedients in this salad, give every mouthful a wonderful surprise. I added extra cranberries and enjoyed the tangy lemon dressing.  I served this to my husband and now he will ask me when am I going to make that "Wonderful Salad" again.

OMG! You guys! When I saw this recipe on Giada's show, I totally had to make it. I made it for chirstmas. My family went crazy over it. Even though we didn't use endive, because we live in the south and pretty much no one knows anything about that down here. But it was amazing. I mean when it was gone they were screaming for more. When I came back to college, I told my friends about it and they were demanding it! So I made it for them, and they just loved it. A delicios combination of flavors and textures!

This unique and tasty salad is light and refreshing. It shouldn't be reserved just for the holidays. The combination of ingredients were great compliments to each other. The craisins add the finishing touch. One might want slightly less lemon, or to add pine nuts, but this is definitely one we will use again. I bet it would definitely impress guests! Beware the ingredients are a little pricy -but worth it!

An excellent salad with multiple textures and contrasts.  Might benefit from a different dressing though.  Maybe a raspberry vinaigrette.  And, to top it all off, it's offered by a total babe.

This was the first time I tried Belgian Endives and with the combination of sweet and savory, it was a big hit.  However, when I make it again, I intend to reduce the amount of lemon by half.  My husband and I felt that it overpowered the recipe.

I made this salad for christmas eve and was disappointed. Its very bitter and most people that tried it didn't care for it very much. The prep time is way more then 15 minutes with all the chopping etc. We doubled the recipe in terms of cranberries and apples and dressing and it was still just so bitter.

I didn't care for this, but my family liked it. The endive is a little bitter, the lemon is bitter, but the cranberries and apples do contrast, yet not in a pleasing way for me.

Yes, it's delicious. Vibrant and delightful. Really nice combination of the slightly bitter endive with the apples and cranberries, etc. Even kids will like it. (Mine do) Giada has great salad recipes. We've never had a mediocre one!

This salad makes a sensory overload for your mouth... it's excellent. My family loved it, I'll make this next year too. The lemon vinegrette adds the perfect zing to all the salad ingredients.   The things I would change are: add more dried cranberries- they add more sweetness and color, and you can add a spring mix of salad greens if you are serving more people. And this salad stores for a few days very well because of the lemon. I love it.

I made this salad last night for a dinner party and it was a big hit.  I gave to recipe to many of my guests.  I made it with pomegranate seeds and they added so much flavor and crunchiness that I don't think I would ever make it with dried cranberries.  I had the leftovers for breakfast!

I loved the taste of the green apple with the Endive Leaves and lemon.  My daughter and I enjoy this new salad for our menu.

I made this at Christmas several times.  I liked the combination of ingredients together.  It was my first try at using Belgian Endive.   It was nice to have something different and interesting to bring to the table.
