Step 1
Place sugar and water in a very clean saucepan over a medium heat and bring to the boil. Agitate the pan to ensure the sugar is dissolved before coming to the boil.
Step 2
Leave to simmer for 2-3 minutes or until the sugar begins to caramelise and reaches soft crack stage. Remove from heat.
Step 3
Using a very clean rubber brush, working quickly, lightly brush a thin layer of sugar syrup over each biscuit and leave to harden. If your toffee hardens too quickly in the pan simply add a few tbsp of water and return to the heat for a few minutes to bring back up to the boil.
